There’s nothing like a crisp, refreshing gin & tonic on a hot summer day. It’s one of my go-to summer cocktails for sure. Gin & tonics are also such an easy drink to dress up and elevate.
This recipe was inspired by a new bottle of gin I was gifted. I’ve tried a lot of gin’s in my day and I can confidently say that this Romeo’s Gin X is delicious. It has notes of watermelon, juniper, cucumber, lavender, dill, lemon and almond that make it a fruity gin–perfectly balanced and deliciously refreshing.
To complement and enhance the flavours already found in the gin, I decided to use cucumber and watermelon to create the ultimate summer G&T.
Watermelon Cucumber Gin & Tonic
Yields 1 drink
You’ll need:
- 1.5 oz Gin (I used Romeo’s Gin X)
- 1 oz fresh watermelon juice
- 0.25 oz fresh-squeezed lime juice
- Tonic water (I used Fever Tree Mediterranean)
- Handful of ice
- Cucumber slice & mint sprig to garnish
Directions: To get your watermelon juice you can either juice your watermelon, or do it the lazy way like me and cut it up, put it in a big bowl and then use the juice that collects at the bottom of the bowl. Cut a long, thin strip of cucumber an line your glass with it, then fill your glass with ice.
Next, add your gin, watermelon juice, lime juice and tonic. Garnish with a sprig of mint and enjoy!
